Our okra plants have finally started producing the last few weeks due to the the fabulous weather we've been having. I've been wanting to pickle something, anything for a while now, but for some reason always put it off because I've never done it before and didn't know what I was getting into. I know, lame excuse! So last night I finally pickled my first 3 jars of okra. It was super easy and I'm excited to try them.

Have you ever seen okra plants this BIG? They're 8 feet tall and going strong.

INGREDIENTS:
1 1/2 pounds fresh okra 3 dried red chile peppers 3 teaspoons dried dill | 2 cups water 1 cup vinegar 2 tablespoons salt |
Divide the fresh okra evenly between 3 sterile (1 pint) jars. Place one dried chile, and one teaspoon of dill into each jar.
In a small saucepan, combine the water, vinegar and salt. Bring to a rolling boil. Pour over the ingredients in the jars, and seal in a hot water bath for 10 minutes. Refrigerate jars after opening.
Super easy and a fun family affair!
