Baja Fish Tacos......

12 oz white flakey fish such as grouper, mahi mahi, or tilapia (I used Tilapia.)
1/4 tsp. of salt
1/8 tsp pepper
dash of cumin
1 tbsp olive oil
1/2 c lowfat mayo
2 tbsp salsa
corn of flour tortillas
2 c of lettuce (I used spinach.)
1 medium tomato, chopped

~Sprinkle fish with salt, pepper, and cumin. Heat oil in a large nonstick skillet over medium heat. Add fish, cook 5 minutes on each side or until the fish flakes easily.

~Meanwhile, for sauce, mix mayo and salsa in a small bowl and set aside. Warm tortillas per package directions.

~Chop fish into small pieces. Divide evenly among tortillas. Top with lettuce or spinach and tomato. Drizzle with sauce and serve.

My little helper apparently got bored watching me cook and instead found entertainment in Baby Einstein....
